BACKGROUND: Wilderness Trail is a family-owned distillery in Danville, KY launched in 2013. They were whiskey consultants for 10 years prior to launching. Their whiskies include a SiB BiB bourbon, a wheated bourbon, another SmB BiB bourbon and this cask strength single barrel rye. They use a copper pot still from a single fermented batch of sweet mash which means each mash is fresh. They enter their whiskey into the barrel at a low proof of 100. This specific bottle is from a single barrel selected by ABC Liquor in Austin with some help from @atxbourbon, check out ABC liquor to get some tasty picks!
NOSE: Some nice floral notes waft up followed by nice oak, some nice cherry, and baking spices. It’s on the lighter side which is a little surprising for a cask strength whiskey, it’s well balanced too! (21/25)
PALATE: It starts off with some very sweet vanilla and then the spice kicks in! There is also some nice floral notes and oak! The spice is a perfect dance partner for the sweeter notes! It’s very easy to sip on and hard to tell it’s a cask strength (35/40)
FINISH: Loads of spice on the finish that left my mouth tingling. There is also the typical oak and pepper that is common for rye whiskey (21/25)
VALUE: With an SRP of $60 this is a great buy! It’s a cask strength rye whiskey that’s not overly spicy and has a nice sweet touch (8/10)
Overall: 85/100
FINAL THOUGHTS: This is an excellent rye whiskey, simple as that! If you’re in central Texas we highly recommend making your way to ABC and picking yourself up a bottle
